Hey there, I'm Gabby Gamelin.
I'm a small town cook/baker in Eastern Manitoba specializing in gluten-free baking and working out of a commercial kitchen 20 minutes away from my home. I'm also a mother of 5 beautiful, fun-loving children and a wife to a very supportive and devoted husband.
Most days you can usually find me in my kitchen working on developing/perfecting my next best thing or being entertained by my two youngest pre-school aged children by day and trying to stop WWIII between my 3 oldest pre-teens by night. Whatever it is, there is never a dull moment around here!
In December of 2017 I was diagnosed with Celiac Disease and it hit me hard! I cried all the way home almost as if I had been diagnosed with terminal cancer. But to me it was the end of my life! I LOVE food and I didn't know much about Celiac Disease but what I did find out in the two weeks waiting for my results is that it was in EVERYTHING...OR at least in everything delicious.
I went into a slight depression about it, I was in shock. I would cry and be okay for a little while and then cry some more. I just could not figure out why this happened to me when I loved to cook, bake and eat!? Then it occurred to me, this could be my bigger purpose! Not that I didn't have purpose already but I know that I have a gift in the kitchen and want to share it with anyone and everyone I can.
I had my children tested two months after my diagnoses having done some research and learning that they could have it too and my one son tested positive. In case you're not familiar with Celiac Disease, they need to be tested every 3 years so we're not in the clear yet for my other 4 and one of my daughters is gluten intolerant.
Now I don't know if you've ever eaten gluten-free bread, but it's comparable to eating a sponge (AND it's so expensive), most baking lacked texture and flavour. I just had to learn how to master this. Bread was my main goal, oh glorious bread. I knew if I could make gluten-free bread I could make almost anything gluten-free. So I did. My first one was incredible but the ingredients it took to make it were costly and I wasn't any better off. I kept trying and testing different recipes and recreating my own, along with my own flour blends. Some turned into bricks, doorstops and then finally breadcrumbs but I was determined. I finally developed one that I was happy with and that my kids loved! YAY! It opened the door to many more recipes to come.
Who would have thought that when I was 5 and made an 'everything but the kitchen sink tuna noodle casserole (with uncooked pasta and canned salmon)' while my mom was sleeping that it would lead me here? She made us eat it for dinner that night by the way and it was awful!
Let's just say I've come a long way and I will do what it takes to re-create baking without the gluten.
